Recipe | Hearty Lamb & Fenugreek Balti Recipe

As I mentioned before in my Indian Lamb and Spinach post, lamb is one of my favourite types of meat and I tend to cook a lot of recipes using various cuts of the meat. Lamb is one of those meats that gives each dish a sense of homeliness, they're always hearty and comforting and when you couple the dishes with potatoes and veggies you simply can't go wrong. This time around I wanted to share my recipe for lamb and fenugreek balti. Its a winner in my household and Elyse from Sweet Elyse Blog is absolutely in love with this and actually craves it quite regularly.

The addition of fenugreek in this recipe changes what could be a basic dish into something quite extraordinary. It really gives the recipe an all new level of tastiness. Fenugreek is actually very good for overall health and wellbeing as well as making a tasty flavour enhancer. As for the health benefits, it can help improve inflammation, digestion, increases male libido and is also a great addition to those who suffer from diabetes.

If you don't normally tolerate spicy dishes, don't worry this doesn't have ''spice'' but it does have a bundle of flavour that will leave you wanting more - why not make this for Valentine's Day for your loved one. Not only is it quick and easy, but it's one that even a beginner could tackle, so you can't
really get it wrong.

✔ 500g of minced lamb
✔ 2 medium-sized potatoes, par-boiled first and then diced
✔ 2 tomatoes, chopped
✔ 2 medium onions, chopped
✔ 1 tablespoon of Fenugreek leaves (I use the dried one offered on Amazon, but if you can get fresh leaves go for that)
✔ 1 tsp of ginger, pulped
✔ 1 tsp of garlic, minced
✔ 1 1/2 tsp of chilli powder
✔ 1 tsp of salt
✔ 1/2 tsp of turmeric
✔ 2 tbsp of cooking oil
✔ 2 chillies, chopped and seeded if you don't like too much heat
✔ 1 handful of frozen peas
✔ 2 tbsp of chopped coriander

✔  In a decent sized bowl, mix the minced lamb with the ginger, garlic, chilli powder, salt and turmeric and then set to the side.
✔ In a wok, fry the oil and then stir-fry the onions until browned.
✔ Once the onions are browned, add in the minced lamb mixture and stir-fry for about 10 minutes.
✔ Add in the tomatoes, par-boiled potatoes, fenugreek and then the peas. Stir-fry for a further 10 minutes.
✔ When you are ready to serve, add the coriander and chillies.

The beauty of this dish is that you don't really require rice with it, but if you do opt for it, it allows you to bulk up on the rice and save more of the main dish for later!
