Indian Lamb and Spinach

Lamb is definitely one of my go-to meats and I think that it's severely underrated and overlooked compared to other meats on offer.

This recipe is an Indian style lamb and spinach dish and it's a perfect meal to have on a cold winters day; what's more, it's quick and doesn't require too many ingredients.

Let's get started

  • 500g of cubed lamb
  • 1 bag of spinach
  • 1 red bell pepper, chopped
  • 2 onions
  • 1 chilli pepper, deseeded
  • 1 tablespoon of  garlic paste
  • 1 clove of garlic, chopped
  • 1 tablespoon of ginger, chopped
  • 1 tablespoon of garam masala
  • 1 tablespoon of cumin
  • 1 tablespoon of chilli powder (mild)
  • ½ tablespoon of salt
  • cooking oil

1) Fry the onions until they start to brown.

2) Once the onions are browned, add in the lamb and stir-fry them until they are browned.

3) Add in the chilli powder, garlic, ginger, garam masala, cumin, salt and stir them so they coat the meat well. Continue to fry for a further 2 minutes.

4) Add 500ml of water and bring it to the boil.

5) Cover the pot and simmer until the lamb is nice and tender.

6) Remove the cover and increase the heat so as to reduce the sauce.

7) Add in the spinach and cook until it starts to wilt.

8) Add the chilli pepper and bell pepper and cook for a further 5 minutes.

I like to serve this dish with rice, but it also goes really well with potatoes, mashed or whole.
